What should you know about a wedding cake in the Caribbean?

The honest answer is that the heat writes half the brief. A classic Swiss meringue buttercream that looks immaculate in a Paris atelier will soften on an open terrace in Sint Maarten by two in the afternoon. That is not a reason to give up on a beautiful cake. It is a reason to design the finish around the venue.

So the first questions we ask are not about flavour. They are: where is the reception, is it shaded, is there air conditioning, and what time will the cake be cut? From those four answers we can tell you what will hold, what needs to stay in the cold until the last moment, and where a dessert table will simply serve you better than a tall tiered cake.

What can you order for a wedding?

  1. Tiered cakesTwo to five tiers, finished in ganache, fondant or a stabilised cream depending on your venue. Flavours are built from the same pastry we bake every day, so nothing is a novelty recipe.
  2. Macaron towersA Caribbean favourite for good reason. Macarons hold in heat far better than cream, they need no cutting, and guests serve themselves. Colours matched to your palette.
  3. Dessert tablesTarts, flans, eclairs, choux, macarons and petits fours arranged as a spread. The most forgiving format for an outdoor reception, and the one guests photograph most.
  4. Welcome boxesViennoiserie and coffee delivered to the villa on the morning of, or to guest rooms the day before. A small thing that people remember.

How far ahead should you book?

Four weeks is the minimum for a tiered cake. Between December and April, the island's high season, book three months out or as soon as your venue is confirmed. We take a limited number of weddings per weekend so that the daily counter production is never compromised, which means dates do close.

Can you work with our planner or venue?

Yes, and it usually makes everything smoother. Give us the planner's contact in the form and we will coordinate delivery windows, setup access and refrigeration directly with the venue. We deliver and set up across the island, both sides.

How far in advance should I order a wedding cake in Sint Maarten?
Four weeks is the minimum. Between December and April, book three months ahead or as soon as the venue is confirmed, because we cap how many weddings we take per weekend.
Will buttercream survive an outdoor Caribbean wedding?
Not reliably on an unshaded terrace in the afternoon. We will tell you that honestly and propose a ganache or fondant finish, a later delivery window, or a dessert table instead. A macaron tower is the most heat tolerant of the showpiece formats.
Do you offer wedding cake tastings?
Yes, by appointment at the Simpson Bay maison. Mention it in your inquiry and we will find a time. If you are not on the island yet, we can talk through flavours and send photographs of past work.
Do you deliver and set up at the venue?
Yes, across Sint Maarten and Saint Martin, and it is included in the quote for island venues. We coordinate the delivery window and refrigeration with your venue or planner directly.
Can you make a cake for a small elopement?
Of course. A single tier for eight people is as welcome as a five tier for two hundred. The lead time is shorter for small work, usually one week.
Can you match a cake to a photograph I found?
Send it with your inquiry. We will tell you honestly what translates to this climate and what does not, and propose the closest thing that will still look right when it is cut.
