La Sucriere bakes bread every night in Simpson Bay. A baguette is $1.75 and a half baguette $1.00. Sourdough runs from $4.50 for a 500 gram ciabatta sourdough to $9.00 for a one kilo round. Whole wheat and cereal loaves are $4.50. Burger buns, hot dog buns and dinner rolls are available to households and to kitchens at trade volume.

Why does bread taste different on this island?

Because most of it arrives frozen. Shipping bread to a small island is a genuine logistics problem and freezing is a reasonable answer to it, but a loaf that has been frozen, thawed and finished in a supermarket oven is not the same object as one baked overnight a few kilometres away. The crust goes soft faster, the crumb is tighter, and the flavour that develops during a long fermentation was never allowed to develop at all.

We bake here. That is the whole claim, and it is the one that matters most.

What bread should you buy for what?

  • A baguette at $1.75 for the table tonight. Buy it the day you eat it, because that is what a baguette is for.
  • Sourdough at $5.00 for 350 grams when you want something that lasts three days and toasts well.
  • A one kilo round sourdough at $9.00 for a villa, a boat or a week of sandwiches.
  • Ciabatta at $1.50 for sandwiches you assemble yourself.
  • Cereal or whole wheat at $4.50 for breakfast toast.
  • Titi bread at $1.00, the small everyday loaf that locals buy without thinking about it.
  • Pizza dough at $2.00 per 300 gram ball, ready to roll.

How do you keep bread in Caribbean humidity?

Paper, never plastic, for the first day. Plastic traps the moisture that softens a crust. After the first day, plastic is actually the better choice, because by then you are protecting the crumb rather than the crust. For a baguette that has gone past its best, run it briefly under the tap and put it in a hot oven for five minutes. It comes back.

Can restaurants and kitchens buy in volume?

Yes. Le Comptoir Pro is our wholesale arm and it supplies restaurants, hotels and supermarkets across Sint Maarten with baguettes, burger and hot dog buns, dinner rolls, sliders, sourdough and pizza dough. Production is overnight and delivery lands before service.

Amazing bakery. You can't go wrong with any of the food here. Chef knows what they are doing. Lamination they achieve is likely difficult in this tropical climate, but everything that should be flaky, is spot on. Staff is very friendly and helpful as well.

This place has such fresh and yummy sandwiches and treats that are reasonably priced. But wait there is more, if you make your way to the back of the bakery you can sit outside on their lovely deck and be entertained by the visiting iguana who actually loves the camera. Stop by you will be so glad you did.

How much is a baguette in Sint Maarten at La Sucriere?
A full baguette is $1.75 and a half baguette is $1.00. Both are baked overnight at our Simpson Bay kitchen and sold at both maisons.
Do you bake sourdough?
Yes. A 350 gram sourdough is $5.00, a 500 gram sourdough ciabatta is $4.50, and a one kilo round sourdough is $9.00. The one kilo loaves are best ordered ahead.
Can I buy burger buns for a barbecue?
Yes. Plain burger buns are $1.00, sesame and poppy are $1.15 and sliders are $0.75. For more than a couple of dozen, send a pickup request so we bake the quantity you need.
Do you sell gluten free bread?
No. We are a traditional French boulangerie and our entire production runs on wheat flour, so we cannot offer a gluten free loaf or guarantee any bread is free of gluten. We would rather say that plainly than sell you something unsafe.
How should I store a baguette in the heat?
Paper for the first day, not plastic, because plastic softens the crust. After the first day switch to plastic to protect the crumb. To revive a firm baguette, wet the crust briefly and give it five minutes in a hot oven.
Do you deliver bread to restaurants?
Yes, across the island, early morning before service. That runs through Le Comptoir Pro, our trade account service.
