What makes a croissant worth the trip here?

Lamination in the tropics is genuinely hard, and it is the reason most Caribbean croissants disappoint. The process folds a block of butter into dough, then rolls and folds it repeatedly until there are hundreds of alternating layers. Butter melts at around 32 degrees. The air in Sint Maarten sits near that for much of the year. If the butter warms and merges into the dough at any point, the layers are lost and you get bread shaped like a croissant.

That is why our lamination happens overnight, in the cold, on a controlled bench. One of our guests put it better than we could: the lamination they achieve is likely difficult in this tropical climate, but everything that should be flaky, is spot on.

Which croissant should you order?

  1. Plain butter croissant, $2.50The one that tells you everything about a bakery. Light for its size, shatters when you squeeze it, honeycomb inside, tastes of butter and not of oil.
  2. Pain au chocolat, $2.75Two batons of dark chocolate in the same laminated dough. The most ordered item at both counters, and the one visiting children point at.
  3. Almond croissant, $3.00A day old croissant soaked in syrup, filled with almond cream, topped with flaked almonds and baked again. This is the traditional French use for yesterday's bake and it is the single item most likely to be gone by ten.
  4. Pecan, pistachio and chocolate, Nutella, $3.50The richer end of the case. The pistachio and chocolate is made long rather than crescent shaped, and it is the one people photograph.

What time should you come for fresh croissants?

Early. Simpson Bay opens at 6 AM and the first batch is out then. Philipsburg opens at 7 AM. By mid morning the almond and pecan croissants are usually gone, especially on weekends and through high season. If you need a specific count of a specific kind, send a pickup request at least twenty four hours ahead and we will set it aside.

Do croissants keep in this climate?

Not well, and we would rather tell you that than sell you yesterday's. Humidity softens the crust within a few hours, which is exactly why same morning is the rule here. If you do have one left over, three or four minutes in a hot oven brings the crispness back. Do not use a microwave.

Amazing bakery. You can't go wrong with any of the food here. Chef knows what they are doing. Lamination they achieve is likely difficult in this tropical climate, but everything that should be flaky, is spot on. Staff is very friendly and helpful as well.

It should feel light for its size, shatter slightly when squeezed, show an open honeycomb structure inside rather than a bread crumb, and taste of dairy rather than of oil. A margarine croissant leaves a coating on the roof of your mouth.
Can I freeze croissants?
You can, on the day you buy them, sealed. Reheat from frozen in a hot oven for around eight minutes. It is better than a stale croissant, though it is not the same as the 6 AM batch.
