The search that brings more visitors to our counter than any other: a real croissant on a Caribbean island. Ours are laminated by hand with butter, proofed overnight and baked before sunrise at both maisons — Cole Bay and Philipsburg — and the early batch sells through most mornings. A proper croissant should shatter at the crust and pull apart in layers inside; humidity is the enemy here, which is exactly why we bake fresh daily and why earlier is always better.
