La Sucriere is a French boulangerie and patisserie in Sint Maarten. Emmanuel, who trained at La Petite Colombe on Saint Barth, arrived on the island in 2013 and took over the bakery in 2014. It now runs two maisons, Simpson Bay and Philipsburg, employs around thirty people, and supplies bread and pastry to restaurants and supermarkets across the island.

Who bakes here?

Emmanuel trained at La Petite Colombe on Saint Barth, which is where a lot of the serious French baking in this part of the Caribbean comes from. He arrived in Sint Maarten in 2013 and took the bakery over in 2014. Everything on the counter comes out of that training, adapted to an island where the humidity fights the lamination every single night.

Why does baking here rather than importing matter?

Almost all bread on this island arrives frozen. It is a reasonable answer to the logistics of a small island, and it is also why so much bread here tastes of very little. We bake on the island, overnight, every night, in Simpson Bay. That decision costs more, needs a night shift and a real kitchen, and it is the difference our guests describe without quite naming it.

What else does the bakery do?

Le Comptoir Pro, our wholesale arm, supplies bread, buns, viennoiserie and pastry to restaurants, hotels and supermarkets across Sint Maarten. It has done for years, and it is a large part of what the kitchen produces every night. If you have eaten a good burger bun on this island, there is a reasonable chance it came out of our ovens before dawn.

What do we care about?

  • Butter. Real butter, in the lamination, which is not negotiable and is why croissants cost what they cost.
  • Baking on the island, not importing frozen.
  • The team. Our guests mention staff more often than they mention any product, and that is not an accident.
  • Being straight about what we can and cannot do, including allergens, lead times and what will survive a Caribbean afternoon.
  • Prices published in public, in US dollars, which is still unusual here.

Where are we going?

Philipsburg opened in 2026 and is the newest part of the story. Beyond that, the ambition is unremarkable and quite hard: bake the same thing, to the same standard, every night, for two counters and a wholesale round, on an island where that is genuinely difficult.

Amazing bakery. You can't go wrong with any of the food here. Chef knows what they are doing. Lamination they achieve is likely difficult in this tropical climate, but everything that should be flaky, is spot on. Staff is very friendly and helpful as well.
