Why does a bakery make better coffee than a coffee shop?

It does not, necessarily. What a bakery does better is the pairing. A cappuccino is a breakfast drink in the country it comes from, and it was designed to sit next to something laminated and buttery. A flat white next to a cellophane wrapped muffin is a drink with nothing to talk to.

One of our guests, who has been to Paris three times, ordered a chocolate croissant and a cappuccino and wrote that both were incredible. That pairing is the entire point of the counter.

What should you order?

• Espresso, if you are standing at the counter for ninety seconds like a French person would.
• Café au lait or cappuccino, if you are sitting down with a croissant.
• Iced coffee, from about eleven in the morning onward, when the island makes the decision for you.
• A second one, on the terrace, because nobody has ever regretted that.

Is there somewhere to sit with a coffee?

At Simpson Bay, yes. The terrace behind the bakery sits on Simpson Bay Lagoon with around sixty seats, and the early morning light on the water is the reason to be there before eight. There is free parking on Welfare Road, and no reservations: it is first come, first served.

At Philipsburg the counter is built for takeaway, which suits a walk down to Front Street, the boardwalk or Great Bay.
